Wigan is set to pour cold water on the idea
that the borough lacks culinary creativity with the launch of its own
special edition cookbook.
Jackbit, local colloquial slang for food, is the apt title of the book
which features 32 tantalising recipes; some traditional, some unique,
and some surprising. The book will be launched on Friday 5th October at
Haigh Hall as part of Wigan’s first ever Food and Drink Festival.
Many of the dishes have been devised by Guy Charvill, Head Chef at Haigh
Hall, but there are also telling contributions from a variety of famous
local sons and daughters of Wigan and renowned local chefs.
Wigan’s very own Sky News anchor and ice-skating sensation Kay Burley
shares her secret family recipe for Brandy Trifle in the book.
Kay said: “I was so excited when I heard about the idea of Jackbit that
I just had to get involved. Wigan folk do love their food, particularly
wholesome and hearty traditional dishes. The cookbook is packed full of
great dishes – I can’t wait to try some of the recipes myself. I hope
everyone enjoys my brandy trifle; it’s been a family favourite for
generations.”
Wigan born writer and broadcaster Stuart Maconie’s has cooked up his
very own special fish dish, entitled ‘Northern Sole’, in homage to the
famous Wigan Casino soul scene.
Stuart said: “This is a dish rich in spirit and taste – just how I
remember Wigan Casino. I love food and I love Northern Food especially,
you can learn a lot about a town’s culture by tucking in to local
dishes.
“I think it’s a great idea to put together this cook book, it’s good to
see that Wigan is developing its culinary talents. Looking through the
book there are treats to suit all tastes whether you’ve got a Lancashire
friendly palette or not. So buy it now and get cooking!”

Wigan Leisure and Culture Trust’s Tourism Development Manager Keith
Bergman said: “We are delighted with Jackbit. Wigan is proud of its
culinary heritage, but it’s clear we have a lot more to offer than just
meat filled pastries. Jackbit is symbolic of how the borough is moving
forward and becoming more adventurous.
“I would like to thank the whole team who pulled together the cook book
including the celebrities, chefs and local residents who provided
recipes. We believe that we have produced a book that will have readers
chomping at the bit to cook up a piece of Lancashire and Wigan in
particular.”
The launch of Jackbit takes place from 7.30pm on Friday 5th October at
Haigh Hall. Tickets priced £30 include a five course meal including
samples of the food featured in the cookbook, a champagne and real ale
reception and entertainment by the fantastic Lancashire Hotpots. To

The special limited edition Jackbit goes on sale at £5.99 from Monday
1st October from Wigan Tourist Information Centre, TESCO stores,
Waterstones, Wigan Borough’s libraries and participating festival
restaurant partners.
Wigan Borough’s Food and Drink Festival, sponsored by TESCO, runs from
Friday 5th to Monday 15th October at venues across Wigan Borough. The
festival is organised by Wigan Leisure and Culture Trust and is part of
the Manchester Food and Drink Festival.
